Tantalizing Toucan – a lively Ethiopian natural from Guji Hamballa, bursting with juicy fruit sweetness and a silky, tea-like finish. Bright, expressive and layered, this coffee showcases everything we love about Ethiopian naturals — clarity, florals and vibrant fruit.

Sourced from smallholder farmers in the Guji region and processed at Hamballa, this coffee is carefully dried as a natural to develop sweetness and complexity while maintaining a clean, structured cup.

Expect a fruit-forward profile with ripe berries and tropical fruit up front, followed by soft florals and a smooth, lingering sweetness. Stunning as a filter, and vibrant with character as espresso.

Story & Origin

This coffee comes from smallholder farmers in the Guji zone of Ethiopia, a region known for producing some of the most vibrant and fruit-driven coffees in the world.

Cherries are delivered to the Hamballa washing station, where they are carefully sorted and dried whole on raised African beds. This natural process allows the fruit sugars to fully develop, creating a coffee that is both intensely sweet and beautifully structured.

Guji’s high altitude, rich soil and ideal climate produce coffees with remarkable clarity and complexity — and this Hamballa lot is a perfect example of that balance.

Brewing Suggestions

Filter Roast: V60, batch brew, Aeropress — expect bright berries, florals and a clean, juicy finish.
Espresso Roast: Espresso, stovetop or milk-based drinks — fruit-forward, syrupy and vibrant with a soft floral edge.

Brew Tips & Ratios

General: Brew ratio of 1:16 to 1:18.
Lower temp = more clarity. Higher temp = more sweetness and body.

V60 (16 g dose)
16 g coffee → 256 g water at 96–97 °C (1:16)
Method: Bloom 40 g for 30 seconds, pour to 150 g by 1:00, finish to 256 g by 1:45–2:00. Drawdown by ~2:30–2:45.

Espresso (1:1.7–1.9)
20–22 g dose → 34–42 g yield in ~25–30 seconds
Adjust grind to balance sweetness and acidity.

French Press
16 g medium-coarse → 240 g water
Steep 4–5 minutes for a rich, fruit-forward and rounded cup.
