Colombia Excelso INZA CAUCA RAFAEL

Altitude: 1700-2000 masl

Process: Washed

Red Apple Acidity, Brown Sugar, Toffee, Plum, Black Cherry

Ethiopia Limu

Altitude: 1800m+

Process: Fully Washed

Apricot, Lemon, Soft Berry, Floral, Tea, Caramel, Biscuity.

It is an all-rounder can be made black and tastes great with milk as well.

Colombia Excelso INZA CAUCA, RAFAEL

Xamba profile represents the richness and diversity of the Cauca Department. It contains the flavours that
characterizes this region through several thermal floors, different layers of volcanic soil and the uniqueness of
microclimates given by the specific geographical layout of a region (terroir).
This diversity is promoted by the presence of the “Colombian Massif”, a mountain knot that originates once the
Andes reaches Colombian territory in Cauca Department. The knot is the origin to 5 massive rivers among the 2 more
important rivers of Colombia (Magdalena and Cauca), crossing the entire country from south to north to finally pour
their waters in the Caribbean Sea. Also is the starting point of the western and central mountain ranges in the
country which gives an extraordinary richness of volcanic soils in this territory.
All these factors combined provide the perfect environment for a rich and complex coffee profile for which this
region is extensively known for. You can find a heavy background of dark chocolate, caramel and brown sugar with
fruity notes of ripen berries and/or citrus notes to tangerine, orange and grapefruit that gives this coffee a distinctive
and vibrant acidity. This medium-high acidity is beautifully paired with a clear “spiced” note that balances the
flavours to round up the mouth feel perception, this spiced note is usually present in the after taste as a hint of
cinnamon, cloves and/or nutmeg.
Xamba Coffee is selected from specific regions that comply with this unique and characteristic profile like Tambo,
Corinto, Inzá, Jambalo, Toribio and Munchique. All coffee used for this selection has full traceability and farmers are
directly beneficiated for their care and dedication to coffee production with price differential over the internal
coffee price. The selection criteria is strictly given by flavour profiling so Xamba constitutes a reliable and consistent
profile that can be used as a single origin or as part of a blend.
There are 2 production peaks in the Cauca Department: May-June and November-December so coffee supply from
this region is year-round assured, being Cauca responsible for approximately 10% of the Colombian production.
Xamba contains the essence of a true Colombian coffee, produced, selected, prepared and tasted by Colombian
hands with a solid mind set to achieve only the highest quality.

Ethiopia Limu

Yirgacheffe is a woreda that borders the Kochere region, and is named after its largest town. Coffee
production here has been around for centuries and is kept separate from other regions as it has a unique flavour

profile. The cup is clean and delicate with distinct floral and tea notes.

How to brew Guidlines

Commercial Machine or a good home machine

Brew ratio of 1:18

  • 23g of Espresso Grind coffee (fine)
  • 42g of espresso liquid (double shot)
  • 27 Seconds This means from when you push button / pull lever, until your 39g of espresso liquid is out you my have to adjust your grind to get this right

Home espresso machine..

The Key here is to really slow the flow down if you can adjust the grind, you need to adjust it so you have the oils coming out of the coffee not just dish water.. lol.. if you are manually putting the coffee in the basket try the calculation below

weight in the basket ____ x 1.8 = Espresso shot in grams/ milligrams

eg. 12 x 1.8 = 21.6 grams or milligrams

all this in 27 seconds if you can but really depends on your machine set up you have.

French press filter coffee - i feel this is a rought guide as it's all about your personal taste.. if its to strong just ad more water????
