The Story
Grown on the lush volcanic soils of Fazenda California in Brazil’s subtropical Norte Pioneiro do Paraná region, this coffee is a product of vision, innovation, and legacy. After acquiring the farm in 2004, the Saldanha family transformed it into a hub of specialty coffee excellence. Today, Luiz and Flavia Saldanha – both trained agronomists and certified Q-Graders – carry forward this dream, focusing on quality, sustainability, and flavour clarity in every cup.
The Process
This unique double fermentation begins with handpicked cherries, sorted and washed to remove defects. They undergo a 48-hour anaerobic fermentation in water infused with a custom starter culture called ORO. After depulping, the coffee is fermented again for another 48 hours in controlled conditions before being washed and dried slowly on raised beds. The result? A complex and vibrant cup with layered sweetness and a smooth, syrupy body.

Guidelines for Espresso & French Press
🔧 Commercial or High-Quality Home Espresso Machine
With Milk (1:16 Brew Ratio)

Dose: 22.5g of finely ground espresso coffee

Yield: 36g of espresso liquid (double shot)

Time: ~27 seconds
Start timing from the moment you press the button or pull the lever until 36g of liquid is in the cup. You may need to adjust your grind size to hit this target.
⚫ Espresso (Black) – 1:17 Brew Ratio

Dose: 21g of finely ground espresso coffee

Yield: 35g of espresso liquid (double shot)

Time: ~25 seconds
Again, start timing when the shot begins and stop when 40g is extracted. Adjust your grind to slow or speed up the flow as needed.
🏠 Home Espresso Machines
If you can adjust your grind, slow the flow right down. You want coffee oils in the cup—not thin, watery shots.
Use this simple formula for manual dosing:
Basket Dose (g) × 1.8 = Yield (g)
Example: 12g in = 21.6g out (aim for ~27 seconds total time).
Note: Extraction time and results may vary depending on your machine.
🫖 French Press (Filter Coffee)
This method is all about personal preference, but here’s a great starting point:

Dose: 16g of coarse ground coffee

Water: 240g of hot water at ~94°C

Brew for 3–4 minutes, then plunge and pour.
Too strong? Just add more hot water after brewing to dilute to taste.
